Avocado Mac ‘n’ Cheese

Creamy mashed avocado brings texture, color, and flavor to this traditional Mac 'n' Cheese dish.

Ingredients:

2 large-size avocados (peeled, pitted)

2 tsp fresh lemon juice

½ cup unsalted butter

½ cup all-purpose flour

2 cups whole milk

Kosher salt

Black pepper

3½ cups white Cheddar (shredded)

½ cup Parmesan (freshly grated)

⅔ pound fusilli pasta (boiled, drained)

Directions:

1. Add the avocados to a bowl along with the lemon juice and mash until silky smooth. Set aside. The lemon juice will prevent the avocado from browning.

2. In a large pan, melt the butter.

3. Sprinkle in the flour and cook for 2-3 minutes, until lightly golden.

4. Pour in the milk, whisking until entirely combined.

5. Season with salt and black pepper.

6. Allow to simmer for 5 minutes, until the mixture begins to thicken.

7. Turn the heat off and add the mashed avocado, the Cheddar cheese, and Parmesan to the pan. Whisking until smooth.

8. Add the drained pasta and stir until evenly coated in the cheesy sauce.

9. Top with chopped avocado and enjoy.
